Sirocco Muffins

Mix the flour, the sugar, the salt and the yeast in a bowl.


Grate the carrots.

Whisk the eggs and add the juice of half a lemon.

Melt the butter in a pan.

 

Add the eggs and the butter into the mixture and stir in.

Add the carrots, half of the chilli pepper in fine slices (without seeds) and the chopped mint.

Blend with a fork.

Pour the mixture into a muffin tray and place in a hot oven (180°) for 25 minutes.

250g flour
1
50g sugar
100g butter
1 pinch salt
2 pinches of yeast
2 eggs
1/2 lemon
150g carrots
Fresh mint
1/2 hot pepper
