This recipe is really easy and gives off nice nutty taste with a friendly kick. I think it’s a nice meal idea for the transition between Summer and Autumn. When you feel the Autumn is coming, the leaves are turning gold and you are wondering if you should turn the heating on....
Cut the squashes in half length-ways
Scoop out the centre.
Score the inside of the squash with a knife.
Brush with oil.
Put in a hot oven (200 degrees) for 30 minutes (may vary according to size of the squash).
In the meantime-
Crush pine nuts with olive oil.
Slice a chilli into small pieces.
Crush the feta cheese and mix in with chilli, oil and nuts.
Take the squash out of the oven. Add the mixture in the centre and put back in the oven for 15minutes at 200 degrees.

2 small butternut squashes
2 spoons of olive oil
30g pine nuts
¼ red chilli
75g feta cheese
