'Purple Hands' Jam-pot
Take advantage of the end of August to take a small bag with you during your walks.
You will probably find blackberries on your way and maybe even the last of the bilberries and lavender, if you are lucky.
When you get home, pick out leaves and insects and give the fruit a quick rinse.
Pour the fruit into a pan and simmer whilst adding the sugar. Don't forget to stir from time to time. Strip the lavender of its purple heads, putting them in a pan with a bit of water and honey.
Heat up and stir, to help the honey dissolve. Then add to the fruit.
Let the mixture reduce and stir occasionally.
Get your jars ready to fill them.

125g sugar
4 stems of lavender
1 tablespoon of honey
